The Book

There are some very good textbooks covering linear models. This one sets itself apart from this group by being specifically targeted to students of liberal-arts colleges. Additionally, this book offers a lot of the mathematics undergirding linear models, thus giving the teacher the options to teach as much, or as little, mathematics as desired.
